Pumpkin Cookies

I have had a few people asking for the Pumpkin Cookie recipe and looking way back in the archives of my site to try and find it, so here it is again, as good as ever.

When you copy the recipe, go ahead and make it a double batch. One batch won’t last long enough.
{And make small cookies so you can justify eating 3 or 4}
Pumpkin Cookies1C Crisco
1C sugar
-cream together

1C pumpkin
1 egg
1 tsp Vanilla
– mix

Combine then add…
2C flour
1tsp baking soda
1tsp baking powder
1tsp cinnamon
1/2tsp salt

Bake at 350* for 12 min.
Frost with caramel icing.
Happy eating.

Don’t run out of frosting. No one wants to eat those!

My Caramel recipe barely covers a double batch so I usually do a batch and a half of frosting.

1 stick of butter – melt
1 C brown sugar -bring to a boil
1/4 C milk – bring to a boil
2 C powdered Sugar.

Get the coffee perking, frost and your good too go.

  1. These are so yummy!  They’ve become an annual tradition at our house ever since you posted them the first time.  Except I’m the odd ball who actually saves some cookies without frosting for me b/c I like them better that way. 🙂
